香辣红油鸡















这道菜是在同一时间有甜有辣!

香料和甜味与西红柿的组合简直是shiok!我想补充一点,它的味道,甚至更好,如果你可以等到第二天吃。

适合与白饭或番茄饭配对,给它一去,你不会失望的!

[香辣红油鸡]

材料A:
黄姜粉1汤匙
鸡 1只(斩成大块)
5大匙油
1茶匙盐

材料B:
西红柿2个 (切小块)
肉桂 1枝
八角 2粒
豆蔻种子5粒
番茄酱⅓杯
番茄膏2汤匙
盐 半汤匙(自行调整味道)
糖 1汤匙(自行调整味道)

Rempah辣酱:
香茅 1枝
红辣椒3条
姜30克
红洋葱1个
大蒜5瓣
葱头10粒
干辣椒酱3汤匙(cili boh)

做法:
1. 把1茶匙盐和1汤匙姜黄粉鸡肉腌制
2. 起锅把鸡肉煎香
3. 把Rempah辣酱磨幼,待用
4 .烧热3汤匙油, 爆香Rempah辣酱
5. 加入番茄丁,桂皮,八角和豆蔻种子,翻炒
6. 加入鸡翻炒,再加入番茄酱和番茄膏和水(足以刚好盖住鸡肉)
7. 加入盐和糖(调整偏好),拌匀,把它烧开和覆盖
8. 再用文火焖一小时,偶尔搅拌,完成。



[Ayam Masak Merah] (Spicy Tomato Chicken)

Ingredients
1 tbsp turmeric powder
1 large chicken (cut into large pieces)

Ingredients:
5 tbsp oil
1 tsp salt
2 tomatoes
1 stick cinnamon
2 star anise
5 cardamom seeds
⅓ cup tomato ketchup
2 tbsp tomato paste
Water (just enough to cover chicken)
1 tbsp salt (adjust to taste)
2 tbsp sugar (adjust to taste)
fresh coriander leaves

Rempah spice paste:
1 lemongrass
3 red chillies
30g ginger
1 red onion
5 cloves garlic
10 shallots
3 tbsp dried chilli paste

Instructions:
1. Add 2 tbsp oil to roasting pan
2. Add 1 large chicken (cut into large pieces)
3. Season chicken with 1 tsp salt and 1 tbsp turmeric powder
4. Bake in 180 degrees C oven for 20 mins
5. Add to food processor 1 lemongrass, 3 red chillies, 30g ginger, 1 red onion, 5 cloves garlic,10 shallots and 3 tbsp dried chilli paste
6. Blend into a fine paste and set aside
7. Dice 2 tomatoes and set aside
8. Flip chicken in the oven at 10 mins
9. Heat 3 tbsp oil in a pot
10. Add blended spice paste and stir fry until fragrant
11. Add diced tomatoes, 1 stick cinnamon, 2 star anise, 5 cardamom seeds
12. Remove chicken from oven and add to spice paste
13. ⅓ cup tomato ketchup, 2 tbsp tomato paste and water (enough to just cover chicken)
14. Season with 1 tbsp salt and 2 tbsp sugar (adjust to preference)
15. Mix well, bring it to boil and cover
16. Let it simmer for an hour, stirring occasionally
17. Serve and garnish with fresh coriander leaves
